Bacon and Cheese stuffed burgers

Ingredients:

2 pounds ground beef

1 cup shredded cheddar cheese (fine shred)

1/2 large onion diced (Yellow Vidalia)

1/4 pound chopped, crisp cooked bacon

1/2 teaspoon Canadian Steak seasoning

2 tablespoon beer

Preparation:

Combine bacon, onion, cheddar cheese and set aside. Combine beef, Canadian Steak seasoning and beer, mix thoroughly, the shape into 6 thin patties. Put bacon/onion/cheese mixture on 3 patties. Top with remaining patties and press edges to seal. Grill until well done, about 4 minutes per side.

Spicy stuffed Burger

Ingredients:

2 pounds ground beef

1-2 pickled jalapeño peppers, finely chopped

½ of a yellow bell pepper diced

1/2 package dried onion soup mix

1/3 teaspoon of cayenne pepper

1 teaspoon fresh cracked pepper

1 teaspoon kosher salt (or more if needed)

1/4 cup Worcestershire sauce

6 slices of Pepper jack cheese

Preparation:

Mix together all seasonings, including jalapeños, to ground beef in a in a large mixing bowl. Form mixture into 4 to 6 half-inch-thick patties. Preheat grill for high heat. Cook for 3 minutes on each side or until desired level of doneness is achieved. Place cheese on burgers when finished cooking.

Marinated Chicken Sandwich

Ingredients:

3 cloves garlic, minced

1/2 c. onion, minced
1/2 tsp. ground ginger
2 tbsp. white wine vinegar
2 tsp. olive oil
2 tbsp. frozen apple juice concentrate, undiluted
4 Boneless and skinless chicken breasts

Preparation:

Combine first six ingredients in a large Ziploc plastic bag. Add chicken. Seal bag. Marinate in refrigerator for 2 hours, turning bag occasionally. Remove chicken from bag, reserving marinade. Coat grill rack with cooking spray; place on grill over medium hot coals. Place chicken on rack and cook 8 minutes on each side, basting frequently with reserved marinade. Remaining items are for the sandwich.
